But if there was a second reason to visit the Golden City, it has to be the delicious Punjabi food that is served at almost every corner. To get a better inside on what the busy streets have to offer, we got chef Saransh Goila to reveal his favourite restaurants in Amritsar, and the dishes he loves to eat there. On top of chef Goila’s list is the Guruji ka Langar at the Golden Temple. The chef tells us that the Golden Temple has one the biggest community kitchens in the world, and one cannot miss out on having a first-hand experience of how they run the show. Serving simple home-style food with utmost dedication—rotis, different types of dals, and local vegetable dishes—the langar is provided 24/7, and consumed by almost one lakh people every day.

Amritsari Kulcha at Kulcha Land and Ashok Kumar Kulche Wala

“The most popular form of kulchas, [Amritsari kulchas] are the only dish that’s well travelled across the country,” says chef Goila. His favourites among the plethora of spots that serve this iconic dish are Ashok Kumar Kulche Wala and Kulcha Land. “While the kulcha at Ashok [Kumar Kulche Wala] is slightly more crispy and flaky, the one at Kulcha Land has better stuffing,” he tells us. Usually topped with butter and served with chana masala, these lip-smacking dishes are sure to please even the most critical customer.

Puri Chana or Puri Aloo at Kanha Sweets

If you’re looking for a hearty Punjabi breakfast, don’t miss out on Kanha Sweets. Chef Goila recommends the Puri Aloo or the Puri Chana. “It’s not a bhatura, it’s a puri,” he says about the crispy, thin ghee-soaked Indian fried bread. Dipping the puri in their aaloo ka sabzi, which has a tarri floating on top, is an experience you’ll savour for days after you leave Amritsar. We suggest you try their Besan Ladoos and Pinnis as well—you won’t be disappointed.

Amritsari Fish Tikka at Makhan Fish Corner

“Some people call it a fish tikka, however, there are places that do a duet—they’ll put it in a tandoor and also deep fry it—and there are places that do separate dishes,” chef Goila tells us about the iconic dish. His favourite spot for this dish is Makhan Fish Corner, which is also a popular joint among fish lovers in the city.

Sarson Ka Saag in the village of Atari

Chef Goila suggests heading out of Amritsar to a village named Atari for the most authentic Sarson Ka Saag you’ll ever taste. “I stayed with this local family about 30 kms outside of Amritsar, close to Wagah Border , and they taught me how to cook the dish,” remembers chef Goila. The family also took him across their fields, and showed them how they cultivate their own ingredients for the dish. “You’ll sit and cook the Makki Ki Roti on open fire,” he reveals. The Saag is unlike anything you’ve tasted before. “It’s coarse and you can see that the leaves are not ground properly. You can smell the fresh pounded coriander—I feel like it’s the most delicious Sarson Ka Saag I’ve ever eaten,” the chef says. If your itinerary does not allow a road trip, the chef recommends two crowd-favourite eateries—Kesar Da Dhaba and Bharawan Da Dhaba. “They both do their own take on the dish, but [if I had to choose] I’d recommend the latter,” he says.

Tandoori Chicken at Beera Chicken House

Next up on his list were the unmissable Tandoori Chicken and Tikkas served at Beera Chicken House. The scrumptious, juicy pieces of meat will leave you wanting for more even before you finish your plate. The Butter Chicken over here is a great pick too, but if you ask the chef, he suggests heading to Ludhiana for the best version in town.

“This one comes highly recommended,” reiterates chef Goila. “Their mutton is suppose to be one of the [best in the city]. It’s cooked really well, so much so that the mutton falls of the bone and it’s really spicy ,” he adds. Yes truly. Some people miss out the aspect of food while travelling to Amritsar which is a must-have experience. Have you visited Amritsar?

I visited last year, till then the main tourist spots I found to be quite revamped but otherwise the surroundings of the locations of the best eateries had an old city vibe. I wish to visit again to indulge in their food throughout my stay.

The problem is that I always gain too much weight in India, because the food is so good.

Definitely, Amritsari kulcha is famous all around but there is much more than it. It’s not all about stuffed kulcha but something Nutrilicious. Yeah, I am talking about the Nutri kulcha. Those soft soya chunks and flatbreads are a perfect couple. You will fall in love with the Nutri at the moment when you see the vendor heating it over the Tawa. Along with the onions, it will be a silver lining to the cloud. The Nutri kulcha is one of the most famous local food of Amritsar. So this is one of the best things in Amritsar you could ever have. For we Indians, chai is a really usual drink but this masala Chai makes me say chai is not just a cup of tea but something way more than that. Well, let me tell you that this tea stall is included in one of the most popular street food in Amritsar. It was imperative that we add this on our early morning bicycle tour .

Have a feast on Kulfa because this something never to be missed. Kulfa has a number of selective mouth-watering ingredients. From Phirni to Faluda, every bite is a treat. In addition to kulfi, Phirni, and Faluda it has crushed ice, Rooh-Kewra, Goond-Katira, and much more goodness. When kulfi is summed up with all this chilled stuff it is qualified as Kulfa. Be sure to try it because you won’t get anything like this anywhere.

Those big fry pans called karhai had given a call from miles away. The way the Puri is deep-fried catches your eyes and the taste of Puri Chana catches your soul. Puri chana is one of the best local street foods. This taste will never leave your mind. I don’t think so I had ever been to Amritsar and not eaten puri chana. Never miss them once you are here. I repeat never!

This Amritsar icon dating to 1916 is tricky to navigate, but the walk through the old city alleyway is well worth the effort. Kesar's velvety dal fry, slow-cooked overnight and tempered freshly before being served, is legendary. The ‘secret' recipe has stayed much the same since its inception. Seniors recall the eatery's pre-Partition past when loath-to-cook single men and housewives paid a daily visit to Kesar for its dal. The creamy urad addiction would be doled out, one ladle at a time, into bowls brought from home by the lazy home cooks. The palak paneer is a must-try, as are the stuffed parathas. Save some room for the phirni, sinfully thick, with the consistency of freshly made fudge.

Though the kulchas disappoint at Bharawan (too doughy and a tad tasteless), the flaky lachcha paranthas here are among the best in the city. The bharta, the palak paneer, the shahi paneer and the dal makhani are all first rate, creating the quintessential dhaba experience—hearty, unpretentious and VFM. Don't miss the kheer—creamy yet light as a dream, a testament to the superlative quality of milk in Amritsar. The waiters navigate the large, packed-to-the-gills space with an air of brusque efficiency. Don't expect patience or politeness.

Started in 2001 by the older brother of the man who owns Bharawan, this one's a modern, upmarket version of a dhaba, with greater attention to seating, service and cleanliness. The menu includes a mix of typical dhaba dishes, as well as dosas, chowmein and the like. Is the food better than Bharawan? The jury's still out on that one.

All India Famous Amritsari Kulcha (vegetarian only)

No visit to Amritsar is complete without a taste of its delicious kulchas (made of maida and baked in a tandoor as opposed to paranthas, which are made of atta and fried on a tawa). Seated on a rickety plastic chair, you can view the kulcha-making process in all its deft glory. A veteran stuffs a spiced potato and cauliflower mixture into a maida ball, a second rolls it out and tosses the kulcha disc to the third, who catches it midair and plasters it onto the tandoor. The final touch: the slathering of unreal amounts of butter on the freshly made bread. No need for a menu here; the sole offering is the mixed stuffed kulcha, served with a side of chana masala and sliced onions in a runny tamarind-mint chutney.

Another culinary gem, this Lawrence Road eatery is famed for its puri chana served with a tangy aloo launji. The puris are larger than usual, crisp with a thin layer of masala stuffing. The food, though delicious, is often less than piping hot, a downer to an otherwise memorable meal. The place also serves Amritsari staples such as aloo kulchas.  Plus, you can also buy a range of freshly fried savoury items, including satpura, Amritsar's answer to puff pastry.

Pal Da Dhaba

With all of three tables, this tiny hole-in-the-wall eatery makes up in taste what it lacks in real estate. Pal offers the best kharode (lamb trotters soup) in town. Come winter and locals head to the bring-your-own-booze hotspot in the evening, bottle of whiskey in tow, to get their daily fix of kharode and tandoori roti. The gelatinous broth made with lamb trotters (paya) is acquired taste for some, but Pal's delicious chicken tikkas and keema naans are confirmed crowd-pleasers.

The popularity of the butter chicken in Punjab has led many to jokingly refer to it as the national bird of the state. But Beera's butter chicken plays second fiddle to its BBQ items such as roasted chicken and chicken tikkas cooked over a charcoal and marked by their absence of red colour. The dhaba's reputation of being Amritsar's chicken paradise doesn't quite measure up. The fare is clearly overrated. If you must eat, do it from your car (as locals do) instead of packing a takeaway. The dishes taste less than stellar when cold.

Makhan lives up to its reputation of being the city's go-to place for fish Amritsari. One bite of the batter-fried sole (sourced fresh from the Beas and the Harike wetland) spiked with ajwain (carom seeds), and you're in fish heaven. The firm-fleshed fish is deliciously light, thanks to the famed ‘sweet' water of Amritsar. Curry dishes such as karhai chicken are worth a try here, as are the silken malai chicken tikkas. The air-conditioned seating is a blessing in summer.

Another hotspot for fish Amritsari. Run by none other than the cousin of Makhan's owner (surprise, surprise). The tandoori chicken at Surjit is as popular as the fried fish, although it was the latter that first catapulted this upmarket dhaba to culinary stardom.

Tips to make the most of your dhaba-hop:

• All kulcha joints in Amritsar shut by about 3pm. So, aim to go there for breakfast or lunch

• BYOB is big in Amritsar. Carrying a bottle of booze is standard practice at most dhabas, especially the non-vegetarian ones.

• Many hole-in-the-wall dhabas (such as Pal and Beera) are quite cramped and lack air-conditioning. It's best to order and eat in your car

Not only is it the home of the Sikh religion, but Amritsar is also a culinary capital of India that seems to be shadowed by other cities. This is what we recommend, if paet puja (stomach worship) is on top of your priority list.

1. Guru Ka Langar

If the Golden Temple is number one on your list, we strongly suggest you partake in the Guru Ka Langar . Langar is a community feast prepared in a kitchen within the temple premises on a large scale (for at least 40,000 people). Everybody is welcome and is seated in rows while they are served by volunteers. The devotion of service to community is absolutely tear jerking. Jostling with other devotees and visitors for a taste of Kada Prasad is worth it, considering that it has a taste like no other. Maybe it's because discrimination and inequality are things that are not tolerated within the walls of the temple.

2. Bharawan Da Dhaba

If being in Punjab makes you crave those stereotypical Punjabi delights, you've come to the right place. Makki ki roti with sarson da saag, stuffed kulchas (potatoes or paneer) with chhole are just some things that they do better than any place in Delhi or London.

Do keep in mind, Bharawan is "pure veg" due to their close proximity to the Golden Temple. But don't let that hamper your decision just because you're a hardcore meat-eater. The kebabs can wait.

3. Paya at Pal Da Dhaba

Probably not something you would get used to, but hooves are a delicacy and we know just the place. Located near the Hathi Gate, the Dhaba is run by its proprietor who is also the iron chef in the kitchen.

A simple broth spiced with garam masala , chilli and lentil leaves and generously blessed with pieces of hooves, the dish is best paired with kheema paratha, although it breaks into a million pieces in your hand.

4. Chicken Tikka Tandoori, Beera Chicken Corner

Featured on the popular television series Highway On My Plate , Beera's isn't fancy but the food is divine! Seating is limited, so if you plan to enjoy it in your car, your hosts would be most obliged to serve you.

The Chicken Tikka is perfectly spiced and goes well with a keeema naan . If things get too dry, a spicy gravy accompaniment is offered for free and you can always get your own booze.

5. Mutton Chaap, Adarsh Meat Shop

Finding this place might a be bit of a challenge, but if you get to C-Block Market Complex near Rose Garden, the locals will know what you're looking for. Your frustration might double as you'll have to queue up to make an order. But seriously, it is worth the wait. Shallow fried and slow cooked, the tender succulent meat comes right off the rib with a spicy and sour flavour. Do try the mutton tikka if you're still drooling after the chaap .

These guys are the benchmark for, you guessed it, Lassi (duh).

Situated near the Hindu College and Durgiana Temple, every autowallah knows how to get here so you're not alone. Churned the way lassi is, the Ahuja's secret ingredient is a natural essence the many patrons still cannot decipher. The original lassi is hands down the best so far, and we suggest a tall steel glass of it first thing in the morning.

7. Bheja Fry, Mame Da Dhaba

Two words. Goat brains. Ewww for some, yum for many. The proprietor, who calls himself 'mama', will chop the brain and fry it with spices and herbs. There's no curry and the dish retains an original colour. It melts in the mouth with a hint of spice. Paired with naan and dollops of butter, you'll down this combo in no time!
